1. Make the oil by adding the olive oil, 1/2 cup basil, salt, lemon juice, honey, and garlic to a high-speed blender. Blend until very smooth. 2. Add the arugula to a plate and spread out. 3. Begin layering the ingredients by creating flat stacks of peaches and avocado and spreading them over the arugula, overlapping them in clusters. 4. Add dollops of ricotta over the peaches and avocado, then sprinkle the feta over the top. 5. Spread the red onion over the top, then the remaining basil. Sprinkle the pistachios over the top and season with salt and pepper. 6. Drizzle the whole salad with the prepared basil oil.
