1: Make the dressing. Heat a sauté pan over medium heat, add the oil, garlic, and jalapeño and stir. Cook for about 2 minutes then remove from the heat and set aside. 2: Add the cucumbers and the salt to a bowl and let them sit for 15 minutes. 3: Add the oil with the garlic and jalapeño to a jar, then add the cashews, cilantro, ginger, salt, tamari, honey and rice vinegar. Whisk or shake with a cap to combine. 4: Drain the cucumbers, rinse, pat dry and place them into a new bowl. Add a few large spoonfuls of the dressing and toss. Top with more dressing, including the cashews, garlic and jalapeño. Top with red pepper flakes and lime zest.
