1: Make the oil. Add the olive oil, basil, salt, lemon juice, honey and garlic to a high speed blender. Blend until very smooth. 2: Assemble the salad. Add the arugula to a plate and spread out. 3: Begin layering the ingredients. Create flat stacks of peaches and avocado and spread them over the arugula, overlapping them in clusters. 4: Add dollops of ricotta spread out over the peaches and avocado. 5: Sprinkle the feta over the top, then spread the red onion. 6: Sprinkle the pistachios and season with salt and pepper. 7: Drizzle the whole salad with the basil oil.
