
Almond-Ginger-Lime Chicken Skewers
Sweet and zesty almond-ginger-lime chicken skewers marinated in a savory almond butter sauce and grilled to perfection. Served with arrowroot noodles and sautéed veggies for a complete meal.
What you need

cup rice vinegar
honey

tsp ginger

cup soy sauce

tbsp sesame oil

lb chicken
apple cider vinegar
tbsp fish sauce

tsp garlic powder

cabbage

snap peas
tbsp maple syrup

cup almond butter
Instructions
1: Blend together almond butter, soy sauce or fish sauce, rice vinegar or apple cider vinegar, sesame oil, maple syrup or honey, lime juice, ginger, and garlic powder until smooth. 2: Add half of the sauce to 2 pounds of chicken cut into pieces and allow to marinate for 30 minutes or longer. 3: Place marinated chicken on skewers and grill on medium-high heat or bake on a rack in the oven at 400°F for about 20 minutes, flipping halfway. 4: Optionally, air fry the skewers for about 15 minutes. 5: Top the cooked skewers with crushed almonds or cashews. 6: Mix the remaining sauce with some water and soy sauce or coconut aminos to thin it out. 7: Toss the sauce with cooked arrowroot noodles and veggies (such as chopped bell peppers, cabbage, and snap peas).View original recipe
