
Roasted Cabbage with Avocado Oil and Boursin Cheese Sauce
Savor a delightful twist on cabbage roasted to perfection with avocado oil, complemented by a creamy garlic and herb Boursin cheese sauce. This dish is brightened with lemon zest and topped with fresh dill and pine nuts for added texture.
What you need

oz boursin cheese

tbsp lemon juice

cabbage

tbsp avocado oil

Instructions
1. Preheat the oven to 425°F. 2. Heat a large skillet over medium-high heat and add 1 ½ tablespoons of avocado oil and cabbage wedges. Sprinkle with ¼ teaspoon salt. 3. Sear the cabbage for about 3 minutes until browned on each side. Add another ¼ teaspoon salt after flipping the wedges. 4. Add ⅓ cup of water to the pan, cover, and transfer to the oven for 20 minutes. 5. Remove the cover after 20 minutes and cook for another 20 minutes, flipping halfway through. 6. In another skillet over medium-high heat, add ½ tablespoon avocado oil, garlic, and scallions. Sauté for about 1 minute. 7. Add lemon juice and 2 tablespoons of water. Stir and add honey and a pinch of salt, stirring for 1-2 minutes. 8. Add Boursin cheese, stirring until it melts into a sauce. Add water, 1 tablespoon at a time, to adjust consistency if needed. 9. Warm the sauce before serving as it will harden upon cooling. 10. Plate the roasted cabbage and top with sauce, fresh dill, lemon zest, black pepper, and toasted pine nuts.
