1: Process 2 cups of arugula, 1 cup of spicy blend greens, 1/4 cup of walnuts, 1/4 cup of olive oil, 2 garlic cloves, juice of one small lemon, 1/2 teaspoon salt, 1 teaspoon coconut aminos, and 1/4 teaspoon red pepper flakes in a food processor until smooth to make the pesto. 2: Prepare scallops by patting them dry and seasoning with salt and pepper. 3: Heat 1 teaspoon of olive oil and 1 teaspoon of ghee in a cast iron skillet over medium-high heat. 4: Sear the scallops in the skillet for 2 minutes on each side until perfectly cooked. 5: Cook chickpea pasta according to package instructions, then mix it with the prepared pesto before serving. 6: Top the pasta with the seared scallops and enjoy.View original recipe
