
Avocado and Roasted Red Pepper Quesadillas
Delicious quesadillas made with roasted red peppers and mashed avocado, seared in coconut oil, served with a vegan tahini ranch dressing. A great lunch option especially after a workout!

tsp salt

cup tahini

tbsp mustard

tbsp fresh parsley

tsp pepper
tsp dill seed

tbsp coconut aminos

avocado

tsp onion powder

coconut oil

tbsp lime juice

tsp garlic powder
Instructions
1: Stuff the tortillas with roasted red peppers and mashed avocado. 2: Heat coconut oil in a pan and sear the stuffed tortillas until golden brown. 3: In a bowl, mix tahini, coconut milk yogurt, mustard, lime juice, coconut aminos, dill seed, chopped parsley, salt, pepper, garlic powder, and onion powder to create the tahini ranch dressing. 4: Serve the quesadillas with fresh berries and shrimp alongside the tahini ranch dip.View original recipe
