
Baked Sheet Pan Cajun Shrimp Fried Rice
A quick and easy baked dish combining RightRice, shrimp, and veggies with a Cajun twist. This sheet pan meal requires minimal prep: just boil water, add rice, and toss with prepared shrimp and vegetables. It's flavorful and perfect for dinner!
What you need

lb shrimp
avocado

baby spinach
tbsp ghee
tsp olive oil

tsp cajun seasoning

tbsp coconut aminos

Instructions
1: Preheat the oven to 375°F. 2: Chop one onion and prepare about 3/4 cup of vegetables (like zucchini). 3: Toss vegetables with a tablespoon of ghee and spread on a sheet pan. 4: Bake the vegetables in the oven for 15 minutes, tossing halfway. 5: Meanwhile, boil water and prepare a bag of RightRice Medley as per package instructions. 6: In a separate bowl, toss one pound of shrimp with a tablespoon of coconut aminos, 1-2 teaspoons of Cajun seasoning, and 2 teaspoons of olive oil. 7: Once the vegetables are done, mix them with the cooked RightRice, and add a tablespoon of tamari soy sauce and some baby spinach. 8: Place the mixture back in the oven for about 10 minutes. 9: Remove from the oven, toss in the shrimp, and return to the oven until shrimp are opaque and cooked through. 10: Serve the dish in bowls topped with sliced avocado and scallions.View original recipe
