
BBQ Shrimp Quesadillas
Quick and delicious BBQ shrimp quesadillas filled with spinach, onion, tomatoes, poached shrimp, and optional dairy-free mozzarella. Perfect for a minimal cooking meal-prep guide.
What you need

lb shrimp
oil

bbq sauce
cup mozzarella

cup onion
Instructions
1: Bring 3 cups of salted water to a boil, add 1/4 pound of thawed shrimp. Turn off heat, then remove after 3 minutes and place in ice water. 2: Heat some oil over medium high, add 1/2 cup spinach and 1/4 cup sautéed onion and sauté for about 3 minutes. Remove and set on a plate. 3: Add 3 tortillas of choice to the pan, add about 1/4-1/3 cup mozzarella to each, then divide spinach mixture between the three. Add a few chopped tomatoes, shrimp, and drizzle with BBQ sauce. 4: Fold over and serve.View original recipe
