
Broccoli & Feta Fritters
Crisp on the outside and tender on the inside, these Broccoli & Feta Fritters are addictive! Serve them with a homemade honey mustard for the perfect pairing. Ready in just 25 minutes, they make a delicious vegetarian side dish or snack.
What you need

tsp garlic powder

clove garlic

cup tapioca starch

tbsp honey

tsp salt

tsp dried oregano

tbsp dijon mustard
pepper

fl oz lemon juice

tbsp mayonnaise
tbsp olive oil

tsp cumin

oz feta
egg
Instructions
1: Bring a large pot of salted water to a boil, then add the broccoli and cover. Cook for about 3 minutes, until blanched. Drain the water and discard, then pat the broccoli dry and chop it into tiny pieces. 2: Add the broccoli to a large bowl, then add the tapioca starch, salt, cumin, oregano, and pepper. Toss to combine. Add the eggs and feta cheese and mix again until well combined. 3: Heat a large frying pan over medium-high heat, then add about 1 tablespoon of olive oil. Spoon a small amount of the mixture into the hot pan, about 3 tablespoons for each fritter. Form the fritters into a round circle, then fry on each side for about 3 minutes, until golden brown. Remove and repeat with the remaining mixture. 4: Make the honey-mustard. Add the mayonnaise, mustard, honey, lemon juice, garlic powder, salt, and pepper to a small bowl.
