
Buffalo Shrimp Stuffed Zucchini Boats
Delicious dairy-free Buffalo Shrimp stuffed zucchini boats that are easy to make and can also be customized with chicken. The zucchini is baked and stuffed with sautéed spinach, shrimp tossed in buffalo sauce, and topped with a variety of fresh ingredients.
What you need

tsp garlic powder

cup hot sauce

tbsp ghee

avocado

cup spinach

sweet potato

Instructions
1: Slice zucchini down the middle, trim ends, and scoop out the flesh. 2: Brush zucchini with oil and place face down on a rack in the oven. 3: Bake zucchini for about 10 minutes before flipping. 4: While zucchini is cooking, sauté spinach with salt and pepper. 5: Boil shrimp and toss in buffalo sauce. 6: For buffalo sauce, mix 1/4 cup of hot sauce with 1-2 tablespoons of warm ghee, 1/2 teaspoon of garlic powder, 1 tablespoon of coconut aminos, and 1 teaspoon of apple cider vinegar, then blend. 7: After 10 minutes, take zucchini out and stuff with spinach, cream cheese, tomatoes, avocado, scallions, cilantro, red onion, and drizzle with tahini. 8: Serve with a half-baked sweet potato.View original recipe
