Dairy-free buffalo shrimp stuffed zucchini boats, perfect for a healthy meal. Baked zucchini is stuffed with sautéed spinach, shrimp mixed in buffalo sauce, dairy-free cream cheese, tomatoes, avocado, scallions, cilantro, and red onion. Serve with a half-baked sweet potato for a complete dish.

Instructions
1: Slice zucchini down the middle, trim ends, and scoop out the flesh. 2: Brush zucchini with oil and place face down on a rack in the oven. 3: Bake zucchini for about 10 minutes before flipping. 4: While zucchini is cooking, sauté spinach with salt and pepper. 5: Boil shrimp. 6: Toss shrimp in buffalo sauce made from mixing hot sauce, warm ghee, garlic powder, coconut aminos, and apple cider vinegar. 7: Take zucchini out after another 10 minutes and stuff with sautéed spinach, dairy-free cream cheese, tomatoes, avocado, scallions, cilantro, and red onion. 8: Drizzle with tahini and serve with a half-baked sweet potato.View original recipe
