
Cajun Shrimp Fried Rice
A delicious baked Cajun shrimp fried rice made with a rice medley, sautéed veggies, shrimp, and Cajun seasoning. Perfect for a flavorful meal any day of the week!
What you need

tbsp tamari soy sauce

tbsp coconut aminos

lb shrimp

tbsp oil
avocado

tsp olive oil

baby spinach

tsp cajun seasoning

Instructions
1: Preheat the oven to 375°F. 2: Start with one chopped onion and 3/4 cup of veggies. Toss them with a tablespoon of oil. 3: Bake the veggies on a sheet pan for about 15 minutes, tossing halfway. 4: In a medium bowl, toss a pound of shrimp with 1-2 tablespoons of coconut aminos, 1-2 teaspoons of Cajun seasoning, and 2 teaspoons of olive oil. 5: Remove the veggies from the oven and toss in 3 cups of cooked rice and 1 tablespoon of tamari soy sauce. Add some baby spinach at this step. 6: Place the mixture back in the oven for about 10 minutes. 7: Remove from the oven, toss the food, and add the shrimp. 8: Place back in the oven until the shrimp are cooked and opaque, being careful not to overcook them. 9: Serve in a bowl, adding some avocado and scallions on top.View original recipe
