
Caramelized Sweet & Spicy Eggplant
A flavorful dish featuring caramelized eggplant with a sweet and spicy glaze, complemented by a tangy sesame sauce.
What you need

tsp sriracha

tsp tamari soy sauce

dash sesame oil
tsp salt
tbsp tahini

eggplant

tbsp rice vinegar

pepper

tbsp water

tbsp olive oil

tsp red pepper flake

bunch scallion
oz sesame seed
tbsp jelly
Instructions
1: Preheat the oven to 425°F. Place a cast iron pan or an oven-safe pan into the oven to heat for 10-15 minutes. 2: Cut the eggplant lengthwise then score the top in a diagonal checkered pattern. Brush the top of the eggplant with the oil, then season with salt. 3: Remove the pan from the oven, add a bit of olive oil, then place the eggplant face down. Place in the oven for 10-14 minutes, until the top is browned. 4: While the eggplant cooks, make the glaze. Add the jelly, tamari, rice vinegar, sesame oil, sriracha, and garlic to a small bowl. Mix to combine. 5: Remove the eggplant from the oven and carefully flip it over. Brush the glaze over the top then place it back in the oven for 25-30 minutes, until the top is caramelized and the eggplant is tender. 6: Next, make the sesame sauce. Add the tahini, water, rice vinegar, salt, sesame oil, and pepper to a small bowl.
