Cauliflower Bites with Pecan-Feta Crumble
These delicious cauliflower bites are topped with a unique pecan-feta-date crumble. Perfect as a vegetarian side dish or appetizer! The combination of roasted cauliflower and a sweet-savory crumble makes this recipe a fan favorite, especially during summer.
What you need

bunch arugula
tsp pepper

tsp dried oregano

garlic
head cauliflower

tsp salt
lemon zest

medjool dates

oz feta
tbsp olive oil

pecan nuts
Instructions
1: Preheat the oven to 400°F. 2: Add the pecans to a baking sheet and bake for 4-5 minutes. Set aside. 3: Adjust the oven to 425°F. Add the cauliflower to a sheet pan and spread out. Add the oil, cumin, oregano, salt, and pepper. Toss to combine. 4: Place a piece of aluminum foil onto the sheet pan, add the garlic head, drizzle with oil, salt, and pepper, and close the foil. Place to the side of the cauliflower. Bake for 40 minutes, tossing halfway. If the garlic isn’t quite done, remove the cauliflower and place the garlic in the oven for another 5 minutes until soft. 5: While the cauliflower is roasting, make the crumble. Add the pecans and begin to chop them, then add the dates and do the same. Continue to add the feta and arugula, chopping after each ingredient is added. Add the salt, pepper, and lemon zest and chop until the mixture is combined and a crumble is created. 6: Squeeze the garlic over the cauliflower, then add the crumble to the top.View original recipe
