
Cheesy Chipotle Quesadillas
Delicious vegan and gluten-free quesadillas made with sweet potatoes and white beans, accompanied by a simple awesome sauce.
What you need

sweet potato
vegan mozzarella

greens

coconut aminos

avocado oil
white beans
Instructions
1: Heat 2 tortillas on medium high in a pan sprayed with avocado oil. 2: Mash some white beans onto one side of the tortilla and add a sprinkle of chipotle powder. 3: Top the beans with vegan mozzarella. 4: Once the cheese starts melting, add some mashed sweet potato and wilted greens. 5: Fold the tortilla over and cook for another 30 seconds. 6: For the awesome sauce, mix organic ketchup with a little dairy free sour cream and a couple dashes of coconut aminos.View original recipe
