
Cheesy Spinach & Garlic Sweet Potato Boats
Delicious sweet potato halves stuffed with a creamy cheese mix, featuring ricotta, feta, and Parmesan, enhanced by garlic and spinach. Perfect for a unique appetizer or side dish.
What you need

cup feta
cup ricotta cheese
tsp cracked pepper

tsp salt

cup mozzarella cheese
tsp pepper

tsp onion powder
fl oz olive oil
sweet potato

bunch scallion

clove garlic clove

cup spinach
Instructions
1: Preheat the oven to 425°F. 2: Drizzle olive oil on the bottom of a large sheet pan, season with salt, and place the sweet potatoes face down. Drizzle the tops with oil and season with salt. Place in the oven for about 20 minutes. 3: While the sweet potatoes roast, make the cheese mixture by adding all ingredients to a bowl and mixing to combine. 4: Remove sweet potatoes from the oven, flip them, and gently mash down the centers. Use a large spoon to spoon about 1/4 cup cheese mixture and top each sweet potato half.
