
Cheesy Spinach Pie Quesadillas
These Cheesy Spinach Pie Quesadillas are a quick 15-minute meal inspired by a family recipe. They can be made dairy-free and pair excellently with a creamy dill ketchup dip or tzatziki sauce.
What you need
tbsp vegan cream cheese

tsp coconut aminos

tbsp greek yogurt

pepper

cup parmesan cheese
tsp oil
lemon

fresh dill

salt
egg

Instructions
1: Combine feta, vegan feta, vegan cream cheese, Parmesan, egg, salt, pepper, coconut aminos, and chopped dill in a bowl. 2: Sauté chopped onion and minced garlic in oil on medium high until onions are soft, then add chopped spinach and allow to wilt. 3: Put spinach mixture in a bowl and drain excess liquid, then add to the cheese mixture. 4: Heat a cast iron pan on medium high and spray with oil. 5: Place almond flour tortillas cut in half on the pan and divide the spinach mixture amongst four of the halved tortillas. 6: Press the empty half tortillas on top of the spinach and cook for another minute. 7: Remove from the pan, cut up, and enjoy with the dip.View original recipe
