Cheesy Spinach Sweet Potato Boats
Delicious sweet potato boats filled with a rich cheese mixture of feta, Parmesan, mozzarella, and ricotta, combined with garlic and spinach for a flavor-packed side dish or appetizer.
What you need
cup ricotta cheese
fl oz olive oil
tsp pepper

cup mozzarella cheese

cup parmesan cheese

tsp salt

cup feta

tsp onion powder

clove garlic clove

bunch scallion
sweet potato

cup spinach
Instructions
1: Preheat the oven to 425°F. 2: Drizzle olive oil on the bottom of a large sheet pan, season with salt, and place the sweet potatoes face down. Drizzle the tops with oil and season with salt. Place in the oven for about 20 minutes. 3: While the sweet potatoes roast, make the cheese mixture by adding all cheese ingredients to a bowl and mixing to combine. 4: Remove sweet potatoes from the oven, flip them, and gently mash down the centers. Spoon about 1/4 cup of the cheese mixture on top of each sweet potato half. 5: Place them back in the oven for about 20-25 minutes, until just browned on the tops. 6: Top with chopped scallions and cracked pepper.View original recipe
