Chili Cheesy Potato Muffins
These Chili Cheesy Potato Muffins are made with gold potatoes, butter, garlic, and spices, topped with cheese and fresh herbs. A delicious and comforting treat!
What you need

gold potatoes

tsp salt
oz ricotta

cup unsalted butter

cup fresh parsley

tsp cumin

tsp chipotle chili powder

cup scallion

cup gruyere

pistachio nuts
Instructions
1: Make the butter. Add the butter, garlic, cumin and chili powder to a small dish. Mix together to form a paste. 2: Add the potatoes to a muffin pan, placing one whole potato in one muffin cup. Divide the butter equally between the 6 potatoes, adding a small spoonful to the center. Season them with salt and pepper then press the wedges together, using the butter as a 'glue.' 3: Place the muffin tin into the oven for 55-65 minutes, until the potatoes are tender and the top edges are crisp. 4: Remove the potatoes from the oven, then add a couple tablespoons of the cheese to each potato center. Place the potatoes under the broiler for about 4 minutes, until the cheese is melted. 5: Top each potato with a little ricotta, parsley, scallions and pistachios.View original recipe
