
Chipotle Ranch Pasta Salad

What you need

tsp chipotle chili powder

tsp onion powder

tsp dried dill weed

tsp coconut aminos

tsp apple cider vinegar

tsp paprika

tsp garlic powder

tsp salt

tbsp water

tbsp mayonnaise

box pasta

cup greek yogurt
Instructions
1: Cook the pasta as per package instructions and set aside. 2: Halve the cherry tomatoes and chop the cucumbers. 3: Sear corn in a pan seasoned with salt, pepper, and paprika with olive oil. 4: In a bowl, mix together Greek yogurt, mayonnaise, salt, apple cider vinegar, coconut aminos, paprika, chipotle chili powder, onion powder, garlic powder, and dried dill weed. Thin with water as needed. 5: For the scallops, pat them dry and season with salt, pepper, and paprika. 6: Heat ghee or coconut oil over medium-high heat and sear the scallops for about 2 minutes on each side. 7: Remove the scallops from the pan and set aside. 8: Combine the pasta, corn, tomatoes, cucumbers, and dressing in a large bowl. 9: Top the salad with the seared scallops before serving.View original recipe
