
Chocolate and Purple Sweet Potato FUDGE Cups
Delicious no-bake fudge cups made with layers of chocolate and purple sweet potato. These cups are low in sugar and packed with protein, making them a perfect treat for any time of day.
What you need

tbsp maple syrup

tsp vanilla

tbsp cocoa powder

tbsp coconut oil

tbsp coconut flour

chocolate protein powder
Instructions
1: Mix together coconut flour, cocoa, and protein powder in one bowl. 2: Melt coconut oil and coconut butter together, then add to the dry ingredients and mix well. 3: Spoon mixture into muffin cups and press down gently. 4: For the sweet potato layer, boil the sweet potatoes and drain most of the water except for about 1 tablespoon. 5: Place sweet potatoes into a mini food processor with coconut butter, yogurt, maple syrup, vanilla, and beef gelatin. 6: Process until thick and creamy. 7: Spoon the sweet potato mixture on top of the chocolate layer and gently press down. 8: Sprinkle with coconut and place in the freezer for about 30 minutes to an hour until firm.View original recipe
