
Cilantro Lime Cauliflower Rice Bowl
A delicious and healthy cilantro lime cauliflower rice bowl topped with baked plantains and a mango chipotle sauce. Perfect for a Mexican-themed lunch while on the Whole30 diet.
What you need

olive oil

plantain

tsp lime zest

tsp salt
cup cilantro
mango

cup cauliflower rice

tsp coconut oil

tsp lime juice
tbsp onion
Instructions
1: Sauté 2 tablespoons of chopped onion in 1 teaspoon of coconut oil. 2: Add 1 cup of cauliflower rice and sauté for a few minutes. 3: Add 1/2 teaspoon of salt and some pepper, then toss with 1/3 cup of chopped cilantro, 1/2 teaspoon of lime zest, and 1 teaspoon of lime juice. 4: For the baked plantains, cut 1 plantain into 1/3 inch slices, toss in olive oil and salt, and bake on a rack over a cookie sheet at 450°F for 10 minutes. Flip and bake for another 10 minutes. 5: For the sauce, blend 1/2 mango with a few tablespoons of chipotle sauce. 6: Serve the cilantro lime cauliflower rice topped with baked plantains, sauce, and soft boiled eggs.View original recipe
