
Cinnamon-Chipotle Pumpkin Fries
Delicious pumpkin fries seasoned with chipotle and cinnamon, served with a creamy ricotta dip. An innovative way to enjoy pumpkin beyond traditional recipes.
What you need

tsp cinnamon

oz pumpkin seeds

tbsp sugar
tbsp maple syrup
tsp salt

tbsp avocado oil

tsp dried sage

tsp pepper

tsp chipotle chili powder
cup ricotta

bunch scallion

tbsp granulated onion

tbsp corn starch
Instructions
1: Preheat the oven to 425°F. 2: Add the pumpkin to a large bowl. Add the starch and toss to coat. Add 2 tablespoons of the oil, sugar, cinnamon, chipotle powder, salt, and onions. Toss to combine. Add the remaining oil and toss again. 3: Spread out on a baking sheet lined with parchment paper and bake for 35-40 minutes, flipping halfway. When they are done roasting, turn off the heat and open the oven 45 degrees. Let the pumpkin sit in the oven for another 5 minutes. 4: While the pumpkin roasts, make the dip. Add the ricotta, maple syrup, sage, salt, and pepper and mix to combine. 5: Top the pumpkin with pumpkin seeds and scallions.View original recipe
