
Citrus Kale & Beet Salad
A perfect winter salad with roasted beets, creamy goat cheese whip, and vibrant citrus flavors, featuring kale, oranges, and a variety of toppings for a wholesome meal.
What you need
cup kale
fl oz olive oil

oz tahini
tbsp greek yogurt

oz goat cheese

fl oz honey

tsp salt

fl oz lemon juice
bunch fresh parsley
pepper
beet
cup walnut

Instructions
1: Preheat the oven to 400°F. 2: Add each beet to a piece of parchment paper, drizzle with olive oil, and season with salt. Wrap each beet and place them on a sheet pan for 1 hour, or until tender. 3: While they roast, make the goat cheese cream. Combine goat cheese and yogurt in a bowl and whisk until smooth. 4: Prepare the kale by massaging it with olive oil, lemon juice, salt, and pepper. 5: Chop the cooled beets into quarters and thirds. 6: Layer the salad starting with kale, then beets, oranges, and goat cheese cream. Top with red onion and fresh pepper. Repeat layers as directed, finishing with walnuts, remaining onions, honey, parsley, and tahini.View original recipe
