
Coconut Curried Cod
A delicious dish featuring cod fillets marinated in coconut milk and rubbed with curry powder, served with crispy roasted potatoes and broccolini.

Instructions
1: Marinate the cod fillets in coconut milk for about 20 minutes. 2: Remove the cod from the marinade and discard the milk. 3: Rub both sides of the fish with curry powder. 4: Sear the cod on medium-high heat, spraying the pan with ghee and drizzling with coconut aminos, for about 2-3 minutes per side, depending on thickness. 5: Roast broccolini with salt, pepper, and garlic according to your preference. 6: Toss the potatoes in coconut oil and unagi seasoning, then roast for about 25-30 minutes at 400°F. 7: Serve with lemon wedges and avocado filled with hemp seeds, olive oil, and balsamic reduction.View original recipe
