
Creamy Cheesy Broccoli Soup

What you need

broccoli florets

cup cauliflower florets

cup coconut milk

shredded chicken

cup water

tbsp nutritional yeast

tsp pepper

tsp salt

tsp dry mustard

Instructions
1: Bring four cups of water to a boil and add 1.5 teaspoon salt. 2: Add 2 cups of cauliflower florets, 1/2 chopped onion, 2 cups chopped and peeled potatoes, 3 garlic cloves, and 1 chopped carrot. 3: Cover and simmer for 15 minutes until the vegetables are soft. 4: Add all ingredients to a high-speed blender with 4-6 tablespoons of nutritional yeast and purée until smooth. 5: Pour the mixture back into the saucepan and add 1/2 cup full-fat coconut milk, 1/4 teaspoon pepper, 1/4 teaspoon ground dill or caraway seed, and 1/4 teaspoon dry mustard. 6: Add 1 head of broccoli florets and mix together. 7: Cover over medium heat until the broccoli is tender. 8: Top with some shredded chicken.View original recipe
