
Creamy Cucumber Salad
A refreshing cucumber salad with a tangy creamy dressing, topped with spiced roasted chickpeas, feta cheese, and crunchy almonds.
What you need

garlic

tbsp dried dill

tbsp honey

tbsp apple cider vinegar

tsp salt
cup greek yogurt
tsp pepper
lb persian cucumber
cup fresh parsley

tbsp mayonnaise
tbsp olive oil

tsp dried oregano

cup feta

tbsp almond

can chickpea
Instructions
1: Preheat the oven to 400. Line a sheet pan with parchment paper and set aside. 2: Pat the chickpeas dry, then add the dried chickpeas to the sheet pan and dry roast for 8 minutes. Remove from oven and add olive oil, salt, garlic powder, dill, oregano, and pepper. Toss to coat and roast for another 10 minutes. 3: In a large mixing bowl, add yogurt, vinegar, honey, mayonnaise, dill, garlic, salt, and pepper. Add cucumbers and toss to coat. 4: Transfer tossed cucumbers to a shallow bowl, top with feta, chickpeas, parsley, and almonds.View original recipe
