This creamy dairy-free roasted garlic spaghetti squash is a delicious and healthy meal. The squash is roasted alongside garlic, then blended with creamy cashew sauce and served with steamed spinach and pine nuts.
What you need

garlic

tsp salt

tbsp coconut oil
lemon zest

cup raw cashews

tbsp lemon juice
fl oz olive oil
pepper

tbsp pine nut

oz parmesan cheese

cup water

cup spinach
Instructions
1: Preheat oven to 400°F. 2: Drizzle olive oil over the bottom of the sheet pan and sprinkle with salt. Add squash face down and rub along the bottom. Place parchment or foil on the sheet pan, add garlic heads, drizzle with olive oil, and wrap tightly. Roast for 35-40 minutes. 3: When done, blend cashews, roasted garlic, water, coconut oil, lemon juice, salt, and pepper until smooth. 4: Remove squash strands with a fork, place in a bowl, add spinach, salt, pepper, and sauce, then toss together. 5: Serve topped with pine nuts, lemon zest, Parmesan cheese, salt, and pepper.View original recipe
