
Creamy Feta Polenta
A delicious creamy feta polenta served with roasted scallions. This underrated combination makes for a perfect side dish, and with the addition of protein, it can easily transform into a full meal.
What you need

tsp salt

cup water

tsp black pepper
tsp pepper

balsamic glaze

tbsp olive oil

pepitas

cup cornmeal

cup milk
Instructions
1: Preheat the oven to 400°F. Line a sheet pan with parchment paper and set aside. 2: Add the water, milk, and salt to a medium saucepan. Bring to a boil and slowly add the polenta, whisking for about 2 minutes to prevent clumping. Reduce to simmer, cover, and cook for about 25-30 minutes, whisking every 5 minutes. 3: While the polenta cooks, add the scallions to the sheet pan, drizzle with oil, season with salt, oregano, and pepper. Toss to combine and place in the oven for 17-19 minutes until slightly charred. 4: When the polenta is finished, remove from heat. Immediately add feta and olive oil, mixing well with a wooden spoon or silicone spatula. Add yogurt or sour cream, salt, and pepper, and mix again. 5: Add the polenta to a bowl, top with scallions, feta cheese, pepitas, red pepper flakes, and balsamic glaze.View original recipe
