
Creamy Feta & Spinach Salmon

What you need

oz fresh spinach

tsp garlic powder
clove garlic

tsp balsamic vinegar

tsp dried dill

cup almond milk

cup coconut milk

tbsp oregano
tsp salt

tbsp avocado oil

cup broth

tsp pepper

onion

tbsp butter

tbsp tomato paste

cup feta
Instructions
1: Place the salmon on a cutting board, pat the filets dry and season with salt and pepper. 2: Heat oil in a large skillet over medium-high heat and sear the salmon, skin side up, first for 4 minutes and then flip to the other side for 3 minutes. Remove the salmon from the pan and set on a plate. 3: Add the onion to the pan and sauté for 2 minutes. Add the garlic and sauté for another minute. 4: Add the almond milk, broth, coconut milk, oregano, salt, pepper, dill, garlic powder, tomato paste, balsamic vinegar, spinach and feta cheese. Whisk to combine and cook for 7-8 minutes until the liquid is bubbling. Add the butter if using. 5: Add the salmon back to the pan and cook for 4-5 minutes.
