
Creamy Garlic Spinach Scallop Skillet
A quick and easy creamy garlic-spinach scallop skillet made with a dairy-free sauce. This dish combines scallops with a flavorful blender sauce and spinach for a delicious meal.
What you need

tsp coconut aminos

tsp pepper

tbsp nutritional yeast

tsp salt

tbsp lemon juice

cup almond milk
Instructions
1: Add the following to a blender: salt, pepper, almond milk, salty broth, chopped garlic cloves, dairy-free cream cheese, coconut aminos, lemon juice, and nutritional yeast. Blend until smooth. 2: Add the mixture to a medium saucepan and stir in frozen spinach. Heat over medium for about 10 minutes, stirring occasionally. 3: For the scallops, pat 12-16 ounces scallops dry and season with salt and pepper. Heat ghee or olive oil over medium-high heat. Add scallops and cook for 2 minutes, then flip and cook for another 2 minutes. Remove and set on a plate. 4: Serve scallops with the creamy spinach sauce, pasta, rice, or just plain.
