
Creamy Garlicky Shrimp and Spinach
A dairy-free, one-pan meal featuring shrimp in a creamy coconut milk sauce with garlic and spinach. Perfect over pasta, rice, or on its own.
What you need

tsp salt
tsp ghee

tbsp lemon juice

tbsp water

tsp garlic powder

tbsp capers
tsp pepper

tsp olive oil

Instructions
1: Heat olive oil and ghee over medium-high heat, then add minced garlic. Cook for about 45 seconds until fragrant. 2: Add peeled and thawed shrimp (seasoned with salt and pepper). Cook for about 2 minutes, then remove and set in a bowl. 3: Add light canned coconut milk and broth or white wine, lemon juice, capers, salt, garlic powder, and pepper. Bring to a boil. 4: Mix arrowroot or tapioca starch with water, then add to the sauce. 5: Add the shrimp back plus chopped frozen spinach.
