
Creamy Honey-Dijon Chicken
A creamy and flavorful dairy-free chicken dish with Brussels sprouts and apples, perfect for a quick 25-minute meal. What you need

tbsp tapioca starch

tsp dried thyme

Instructions
1: Blend together cashews, boiling water, tapioca starch, salt, pepper, onion powder, and dried thyme until smooth and set aside. 2: Heat olive oil over medium heat in a cast iron skillet, and sear chicken skin side down for 5-6 minutes until crispy, then flip and cook for 3 minutes on the other side. Remove and set on a plate. 3: Add Brussels sprouts (cut side down) and cook for 2 minutes, then toss and add chopped onion. Sauté for another 2 minutes, then add sliced apple and chopped garlic and sauté everything for 3-4 minutes until soft. Remove and set in a bowl. 4: Add broth, Dijon mustard, honey, capers, a few dashes of hot sauce, and the cashew mixture and whisk together. Allow to thicken for 2 minutes, then add chicken back in and cook for about 8-10 minutes until chicken is cooked. 5: Add veggies back in and toss.View original recipe
