What you need
tsp salt

tbsp avocado oil

bunch scallion

oz feta

lb yukon gold
tbsp honey
pistachio
Instructions
1: Preheat the oven to 400°F using a convection setting. 2: Place the sliced potatoes into a bowl of ice water for 5 minutes to remove some of the starch, then drain and pat dry. 3: In a large bowl, add oil and salt to the potatoes and toss well. Place them on a greased baking sheet without overlapping. Sprinkle with dried dill. 4: Bake the potatoes for 7-8 minutes, then flip and bake for another 6-7 minutes. Adjust time as needed based on your oven. Allow them to cool for 10 minutes. 5: For the feta dip, place the feta on an oven-safe plate, top with hot honey, and bake for 12-14 minutes until the feta is soft and the honey is bubbling. 6: Top the baked feta with chopped scallions and pistachios, and serve with the homemade potato chips.View original recipe
