Instructions
1: Blend together the sweet potato, cashews, water, and garlic until smooth. 2: Heat a large sauté pan over medium-high. Add the olive oil, onions, and tomatoes. Sauté for about 4 minutes then add the chickpeas, salt, paprika, and cumin. Toss to combine then add the dates and broth. 3: Heat for a few minutes, then add the sweet potato mixture. Mix together, bring to a boil, then reduce the heat to a simmer. 4: Add the basil, cilantro, and a squeeze of lemon.
