
Crisp Grilled Zucchini

What you need

tsp salt
zucchini
tsp pepper

tbsp basil

tbsp olive oil

tbsp dried oregano

cup feta

cup pistachio
Instructions
1: Preheat the grill to medium-high. 2: Slice 2 large zucchini lengthwise into slices. Brush the tops with 1-2 tbsp olive oil, 1/2 tsp salt, 1/2 tbsp dried oregano and pepper to taste. 3: Make the crumble: chop up 1/4 cup pistachios, 1/4 cup feta cheese, 2 tbsp basil, zest of 1/2 lemon, 1/4 tsp salt and 1/4 tsp pepper. Continue adding each ingredient one at a time and chop until it creates a nice crumble. 4: Grill the zucchini on each side for 2-3 minutes, then plate it and top the zucchini with the crumble and some tahini (optional).View original recipe
