fl oz lemon juice
cup greek yogurt

tsp seasoned salt

oz oil packed sun dried tomatoes
Instructions
1: Preheat the oven to 425°F and place a cast iron or oven-safe skillet in the oven for 15-20 minutes. 2: Prep the zucchini by adding it to a plate, topping it liberally with salt, and letting it sit for 15 minutes before patting dry with paper towels. 3: While the zucchini sits, prepare the feta-yogurt by mixing yogurt, feta, parsley, garlic, lemon juice, and salt in a bowl. 4: Remove the skillet from the oven, add the zucchini face down, and roast for 30 minutes, flipping halfway. 5: While the zucchini roasts, prepare the topping by chopping sun-dried tomatoes, parsley, almonds, garlic, and salt together, then mixing with oil in a bowl. 6: Spread the feta-yogurt onto a plate, place the zucchini on top, and sprinkle the topping over everything.View original recipe
