
Crispy Carrot Fries
These crispy carrot fries are paired with an addictive basil cashew cream, making them a delightful healthy snack or side dish. The carrots are seasoned and roasted until crisp, while the cashew cream adds a creamy, flavorful element that elevates the dish.
What you need
tsp pepper

bunch fresh basil

tsp honey

tsp dried oregano
tbsp olive oil

tsp garlic powder

tsp salt

cup raw cashews

tsp paprika

tsp cumin
lb carrot

oz pine nut

medjool dates

tbsp garlic

tbsp water
tbsp cornstarch
Instructions
1: Preheat the oven to 425°F. 2: Make the spice mixture by combining the arrowroot, salt, oregano, cumin, garlic powder, and paprika. 3: Add the carrots to a sheet pan, then add the olive oil and the spice mixture. Toss to combine. 4: Place the carrots in the oven and roast for 35-40 minutes until crisp, tossing a couple of times throughout. 5: While the carrots roast, make the cashew cream by adding the cashews, basil, boiling water, lemon juice, garlic, honey, salt, and pepper to a high-speed blender. Blend until smooth. 6: To serve, spread a layer of the cashew cream onto a plate, top with the carrots, then sprinkle with pine nuts, fresh basil, and chopped dates.View original recipe
