
Crispy Feta and Sun-Dried Tomato Fries
These fries are topped with a delicious feta and sun-dried tomato mixture and served with a garlic-mustard aioli. A perfect side dish that's better than any cheesy fries you’ve had!
What you need

tbsp honey

tbsp mayonnaise

pinch salt

tbsp whole grain mustard
tbsp greek yogurt
tsp pepper
tbsp olive oil

tsp dried oregano
tbsp red pepper flake

lb russet potato

clove garlic clove

oz feta

tbsp arrowroot powder
tbsp parsley
tbsp sun dried tomato

tbsp fresh chives
Instructions
1: Preheat the oven to 400°F and line a baking sheet with parchment paper. Place it in the oven while it preheats. 2: Place the potatoes in a bowl of ice water and let them sit for 30 minutes. Drain the ice and water, then pat the potatoes very dry. 3: Add the starch to the dry potatoes and toss to coat. Next, add the oil, salt, dill, oregano and pepper. Toss to combine, ensuring no starch remains visible. 4: Remove the baking sheet from the oven, then place the potatoes on the hot baking sheet, spreading them apart to avoid overlap. Bake for 40-45 minutes, tossing halfway through. 5: While the potatoes bake, prepare the feta topping and aioli. For the topping, combine feta, parsley, chives, garlic, sun dried tomatoes, and red pepper flakes in a bowl. 6: For the aioli, mix mayonnaise, yogurt, mustard, honey, garlic, and salt in a small bowl. 7: Remove the fries from the oven and add them to a large bowl. Toss with more than half of the feta mixture, then plate the fries and top with the remainder of the feta mixture.View original recipe
