What you need

english cucumber

tsp maple syrup
lemon zest

cup mixed greens

tsp onion powder

tbsp water
tbsp olive oil
cup parsley

tsp salt

fl oz lemon juice

oz parmesan cheese

clove garlic

can artichoke hearts

can cannellini beans

tsp garlic powder
tbsp cornstarch
tsp pepper

tbsp capers

tsp dried oregano

cup roasted red bell pepper

fl oz honey

tsp spicy brown mustard
Instructions
1: Preheat the oven to 425°F. Line a baking sheet with parchment paper and set aside. 2: Drain artichokes and pat dry. Place into a bowl and add the starch and toss. Add the oil, then the spices and toss again. Place them onto the sheet pan, spread apart. Top each one with a spoonful of parmesan. Bake for 23-28 minutes, flipping halfway until crisp. 3: Make the dressing—add all ingredients to a bowl and mix to combine. 4: Make the salad. Add all the ingredients to a large bowl and toss. Add the dressing and toss again. 5: Plate the salad, then top with the artichokes, parmesan, lemon zest, and honey.View original recipe
