Add the pesto and the parmesan cheese to a small bowl and mix with a fork until well combined. 3: Add spoonfuls (about 2 tsp each) to a sheet pan or casserole dish. Spread them out about 2-3 inches apart. 4: Top each spoonful with a zucchini round and gently press down.
