
Crispy Smashed Potatoes
These crispy smashed potatoes are boiled, seasoned, smashed, and roasted to perfection. Topped with a flavorful honey-mustard feta dip, each bite is elevated with creamy feta goodness. Perfect as a side dish or snack!
What you need

tbsp honey

tbsp butter

tbsp dijon mustard

tsp salt
tsp pepper

fl oz lemon juice

tbsp mayonnaise
tbsp olive oil

tsp dried oregano

tbsp scallion

lb baby potato

cup feta

cup plain greek yogurt
Instructions
1: Preheat the oven to 450°F. Line a baking sheet with parchment paper and set aside. 2: Bring a large pot of water to a boil, add 1 tbsp of the salt and the potatoes. Cook for about 18-22 minutes, until tender. 3: Drain the potatoes, then add the olive oil and butter. Toss until melted. 4: Add the remaining salt, garlic powder, oregano, and pepper. Toss again. 5: Place on the baking sheet and smash with the bottom of a cup until about ¼ inch thick. 6: Drizzle with oil and spice mixture, add scallions, and bake for 25-35 minutes, flipping halfway.View original recipe
