
Crispy Smashed Potatoes & Dip
Crispy smashed potatoes seasoned and roasted to perfection, served with a honey-mustard feta dip for a satisfying side dish. They are easy to make by boiling, smashing, and roasting the potatoes. The dip enhances each bite with creamy feta goodness.
What you need
tsp dried oregano
tbsp honey
tsp salt

lemon juice

tsp garlic powder

tbsp avocado oil
tbsp mayonnaise

tbsp dijon mustard

tsp pepper
Instructions
1: Preheat the oven to 450°F. 2: Line a baking sheet with parchment paper and set aside. 3: Bring a large pot of water to a boil, add 1 tbsp of the salt and the potatoes. Cook the potatoes for about 18-22 minutes, until tender. 4: Drain the water, then add the olive oil and butter to the pot of warm potatoes. Toss until the butter is melted. 5: Add the remainder of the salt, garlic powder, oregano, and pepper, then toss the potatoes again. 6: Place the potatoes on the baking sheet and use the bottom of a flat-bottomed cup to smash them until they are about ¼ inch thick. 7: Drizzle the extra oil and spice mixture over the smashed potatoes, add the chopped scallions, and bake for 25-35 minutes, flipping halfway through, until crisp on both sides.View original recipe
