
Crunch Wrap
Ten minute copycat Taco Bell crunch wraps filled with cheesy sweet potato and spinach, served with a side of Sriracha aioli. A vegan and paleo-friendly recipe that is quick and easy to prepare.
What you need

tsp sriracha

cup sweet potato

cup vegan cheddar cheese

garlic

spinach

sesame oil
lime

onion
Instructions
1: Make a cut out on two tortillas with a large mug to make them smaller. 2: Place a few crushed tortilla chips on top of the larger tortilla. 3: In a bowl, combine mashed sweet potato, vegan queso, and vegan cheddar cheese. 4: Divide the mixture amongst the two large tortillas. 5: Sauté chopped onion, garlic, and spinach, and top the cheesy mixture with the sautéed spinach. 6: Place the small tortillas on top and fold the large tortilla over the small one in pleats. 7: Heat coconut oil or ghee over medium-high heat and place the folded side down on the pan. 8: Cook for 2 minutes, then flip and cook for another 2 minutes. 9: For the dip, mix mayo, Greek-style yogurt, sriracha, a squeeze of lime, and sesame oil if desired.View original recipe
