Crunchy Sesame & Onion Crusted Zucchini
This addictive dish features zucchini coated in a crunchy sesame and onion crust, served with a flavorful bang-bang sauce. Perfect for a side dish or appetizer, it's a vegetarian delight that’s both healthy and delicious!
What you need
tbsp olive oil

tbsp granulated onion

tbsp sriracha

tsp salt
lime
lb zucchini
bunch cilantro

fl oz sesame oil

tbsp corn starch

peanut

cup sesame seed

tbsp sweet chili sauce
Instructions
1: Preheat the oven to 425°F. Place a cast iron or oven-safe skillet in the oven for 15-20 minutes. 2: Prep the zucchini. Add the zucchini to a plate and top liberally with salt. Let the zucchini sit for 15 minutes then pat dry with paper towels. Do not rinse. 3: While the zucchini sits, make the sesame mixture. Add the sesame seeds, granulated onion, and salt to a plate. Mix to combine and set aside. 4: Add the zucchini to a bowl, add the corn starch and toss. Add the olive oil and toss again. Individually, dip the flat side of the zucchini in the sesame mixture and place them into a plate. 5: Remove the pan from the oven, then add the zucchini face down. Place in the oven for 30 minutes, flipping about 7 minutes before the end. 6: While the zucchini roasts, make the sauce. Add the mayo, sweet chili, sriracha, and lime juice to a small bowl. Mix to combine and set aside. 7: Serve the zucchini topped with the sauce, cilantro, peanuts, and a drizzle of sesame oil.View original recipe
