
Crunchy Sweet Potato Fries
These crunchy onion-crusted sweet potato fries are crisp on the outside and soft on the inside, served with a whipped roasted-garlic avocado and ricotta dip. A hit for any gathering, these fries are easy to make and pack a delicious flavor, perfect for a side or snack.
What you need

garlic

tsp sugar

bunch fresh chives

tsp salt
avocado
tsp pepper
bunch fresh parsley
cup ricotta

oz parmesan cheese
tbsp olive oil

tsp cumin
lb sweet potato

tbsp arrowroot powder

tsp granulated onion
Instructions
1: Preheat oven to 400°F and place a metal rack over a sheet pan. 2: Place sweet potatoes in a bowl, add starch, and toss with hands. 3: Add 2 tbsp of olive oil and toss again until starch is no longer visible. 4: Add cumin, chili powder, sugar, salt, and pepper; toss again. 5: Add remaining olive oil and onion granules; toss to coat. 6: Spread fries on the rack and bake for 40 minutes, flipping after 20-25 minutes. 7: Add garlic to aluminum foil, drizzle with oil, salt, and pepper, and place in oven with fries. 8: When fries are done, turn off oven, remove garlic, and leave fries in oven to cool for 10-15 minutes. 9: While cooling, make the dip by processing avocado, ricotta, roasted garlic, salt, pepper, and parsley in a food processor until smooth. 10: Top dip with chives and parmesan.View original recipe
