
Cucumber & Bell Pepper Salad
A refreshing salad made with cucumbers, bell peppers, and a delicious chutney of sun dried tomatoes, dates, and walnuts. Perfect as a side dish or on top of fish.
What you need
cup red onion

tbsp capers

tsp salt
cup olive oil

tbsp balsamic vinegar
cup cilantro

tsp cumin

clove garlic
cup red bell pepper
tsp red pepper flake

cup medjool dates
cup sun dried tomato
cup walnut
cup cucumber
Instructions
1: Make the chutney. Add the sun dried tomatoes, dates, walnuts, cilantro, capers, red pepper flakes, cumin, salt, olive oil, balsamic vinegar, and garlic to a small bowl. Mix to combine. 2: Assemble the salad. Add the cucumbers, bell peppers, red onion, parsley, salt, and chutney to a large bowl. Toss to combine. 3: Serve with bread, if desired.View original recipe
