
Dairy-Free Lemon Mustard Chicken Skewers
A delicious meal featuring chicken skewers marinated in a lemon mustard mixture and served alongside garlic mashed plantains. The dish is flavorful and perfect for a quick dinner, taking around 30 minutes to prepare (excluding marination time).

1: Boil the plantains for about 4 minutes and then mash with minced garlic, salt, pepper, and garlic ghee. 2: Cut the chicken breast into 1 inch cubes and marinate in almond milk yogurt, brown mustard, lemon zest, salt, onion powder, pepper, and coconut aminos for a couple of hours in the fridge. 3: Soak wooden skewers in water for a few hours before use to prevent burning. 4: Place marinated chicken on skewers and bake on a cast iron or non-stick pan for 20-25 minutes, flipping halfway through.View original recipe
