
Dairy-Free Ricotta Quesadillas
Delicious and easy-to-make vegan and paleo quesadillas featuring sautéed zucchini and homemade dairy-free ricotta, seasoned to perfection.
What you need

tsp onion powder

coconut oil

tsp garlic powder

tsp salt

zucchini

cup water

tbsp lemon juice

xanthan gum
Instructions
1: Sauté some thinly sliced zucchini (season with salt and pepper if desired). 2: Heat 3 cassava flour tortillas over medium high in a little coconut oil. 3: Spread some of the ricotta on each tortilla. 4: Top with sautéed zucchini and fold over. 5: Cut the folded tortillas into halves. 6: Brush with pesto and serve with marinara.View original recipe
